Hello my YMM Readers,
So on last night's menu, I made Jamaican Stew Chicken w/ Rice & Pea and Sweet Plantains. Now, can you say yummy. I made this meal for my family and its very simple and easy to make for yourself or your family. Since cooking is one of my passion, I'll be cooking up simple meal, and post them so that you can make them as well.
Here's the recipe:

Rice & Peas:
-1 Can of Red Kidney Beans
-2 cups of Brown or White Rice (I used Brown Rice)
-2 1/2 cups of Water
-1 Tbsp of Butter
-1/4 cup of brown sugar (for taste)
Bring water to boil on Medium heat, add Kidney Beans. Add butter to water, and let boil for 5 minutes. Add rice to boiling water and sugar. Cover pot and lower stove to low heat, let simmer for 20mins or until rice is fully cook.
Stew Chicken
-Chicken Strips or Chicken breast cut in cubes
-4 Medium Size Carrots (cut thin slice)
-1 medium size green bell pepper
- 2 tbsp of black pepper
- 2 tbsp of garlic and or onion powder
-1 tbsp of Browning
-1 1/2 tbsp of Olive Oil
-1 cup of water
-2 Tbsp of flour
Mix all the ingredients in a large bowl, add oil to pan (on medium heat). Put all ingredients into the heated pan , and turn heat to low. Continuously mix together until meat is cook. Add 1 cup of water then cover and let simmer for 20-25. Check to make sure meat is fully cook and tender. If it needs to stay covered for another 5-10 min, it's ok!
You want to make sure that your meat is tender and cooked. Once meat is cooked, mix flour and water in a small bowl, while the meat is still on the stove and boiling, add flour/water mixture and stir. Make sure your stove is on low heat while you pour mixture and stir. (this is your gravy) Once mixture is in, let it simmer for 2 mins, then remove from heat.
Serve Rice & Stew Chicken Hot....
Can be served with a salad or fried sweet plantains.
